RAW OAK knife set with 4 knives
Made to last a lifetime.
Four knives for the different jobs in the kitchen: FREYA utility knife, FRIGG santoku, TYR bread knife and ODIN chef’s knife. The oak knife stand in the photos is not included.
Four knives,
each with its own job.

Odinᚨ
The All-Father
He gave an eye at Mímir's well to drink its wisdom. Every morning his two ravens, Huginn and Muninn, Thought and Memory, fly out across the world, and every evening they tell him what they have seen.

Friggᛒ
Queen of Asgard, keeper of the home
Odin's wife and the wisest of the goddesses. She knows the fate of every living thing and tells none of it. At her wheel she spins the clouds.

Tyrᛏ
God of oaths and courage
When the gods bound the wolf Fenrir, Tyr laid his hand between its jaws as a pledge. The wolf bit. Tyr lost his hand, and kept his word.

Freyaᚠ
Goddess of love and the harvest
She rides in a chariot drawn by two cats and wears Brísingamen, the shining necklace made by four dwarves. Where she goes, things grow.
Hardened in heat.
Finished in ice.
In Norse myth, the world began in Ginnungagap, where the fire of Muspelheim met the ice of Niflheim. Every RAW OAK blade goes through both. The steel is vacuum hardened in heat, then cooled in liquid nitrogen. That deep cold takes it to 61 HRC.
Harder steel.
A longer edge.
Hardness is one of the factors that affect how long a knife stays sharp. Many kitchen knives sit at 55–58 HRC.
The trade-off: hard steel is less forgiving. Keep these knives away from bones and frozen food, and off glass or stone boards.
The scale starts at 54 HRC so the differences are easy to see. Hardness varies with heat treatment. The hardness ranges are quoted from MachineMFG and the X50CrMoV15 figure from the steel mill SIJ Metal Ravne (56 HRC). They give context; they are not results from a side-by-side test of these knives.

What are you
cutting tonight?

Tyr
Use the full length in long, steady sawing strokes and let the serrations do the work. The crumb stays whole and the crust is cut clean.
Odin
Frigg
TyrOak was
Thor's tree.
Across the old North, the oak belonged to the god of thunder. It is the wood of the whole RAW OAK series, and the reason for its name.
The handles are stabilised North American red and white oak. Brass at the end of each handle helps the balance. Some handles are fumed with our own oak-fuming method, others are burnt. The grain of the wood and the different blade surfaces give each knife its own character.
All the blades in the set are made from 9Cr18MoV steel and hardened to 61 HRC.
We make RAW OAK in small batches in our workshop, never more than 300 of each knife at a time, so every one can be checked. Every edge is sharpened by hand, not by machine.
The gods are
in your week.
Some trace Friday to Freya instead. Either way, three of the four already have a day of their own.

Simple care.
A lifetime of use.
Hand wash
Wash each knife by hand, dry it straight away and put it away. Never the dishwasher.
Cut on wood
An end-grain oak board is kindest to the edge. Not glass, stone or metal.
Wax the oak
If the handle feels dry after many washes, sand lightly with 1500-grit paper and rub in a food-safe wood wax.
Learn to sharpen
RICEKNIFE does not sharpen knives. Jacob teaches you to do it yourself: Jacob's Sharpening.
More gods.
The same oak.
Before you decide.
Which RAW OAK set should I choose?
Four knives cover the everyday essentials: ODIN, FRIGG, TYR and FREYA. The 6-knife set adds THOR, the Chinese chef's knife, and BALDR, the compact santoku. The 3-knife set is THOR, TYR and BALDR.
What does the price pay for?
9Cr18MoV steel cooled in liquid nitrogen to 61 HRC, where many kitchen knives sit at 55–58. Stabilised oak handles with a brass weight, which you can sand and wax back to new. Small batches of no more than 300 per knife, every edge sharpened by hand. And two founders who answer your questions themselves. As a set, you save 14% compared with buying the knives one by one.
Will steel at 61 HRC chip?
Hard steel holds an edge longer but is less forgiving. Used for what it is made for, on a wooden or suitable plastic board, it is fine. Keep it away from bones, frozen food, hard shells and glass or stone boards.
Why are the knives named after Norse gods?
Every knife in the RAW OAK series carries the name of a god from Norse mythology. ODIN leads, FRIGG keeps the home, TYR has the teeth and FREYA handles the harvest. THOR, the Chinese chef's knife, got its name because it looks like his hammer.
Can the knives go in the dishwasher?
No. Wash each knife by hand, dry it straight away and put it away. A dishwasher can damage both the edge and the oak handle.
How do I keep the oak handle looking good?
If the oak feels dry after many washes, sand it lightly with 1500-grit sandpaper and rub in a food-safe wood wax made from mineral oil and beeswax.
Is the knife stand included?
No. The set is the four knives, each in its own box. The oak stand in the film is sold separately as the 4-slot oak knife stand.
Do the knives arrive sharp?
Yes, every edge is sharpened by hand before it leaves us. Unpack the set carefully and keep the knives away from children.
Who designed the set?
Danish chef Jacob Bech and Creative Director Shanru Lin, the founders of RICEKNIFE.
Can I return the set?
Yes, within 100 days, for any reason. If you change your mind, you pay the return postage. If a knife is faulty, we pay. Our returns policy does not affect your statutory rights. Read the returns policy.
