Is LOKI right for you?LOKI
in short.

- Raw fish for sashimi and sushi
- Salmon, trout and other fillets you want in neat slices
- Roasts and boneless meat in long, thin slices
- Right- and left-handed cooks: the blade is ground on both sides
Not for
- Bones and fish bones
- Frozen fish and frozen meat
- Chopping vegetables and herbs. That is ODIN’s or FRIGG’s job
- Glass or stone boards

Is LOKI the
right knife for you?
Loki could take many forms. Answer two questions and we will show you the knife that fits what you cut.
1 of 2 · What will you cut with the knife?
2 of 2 · Will the knife also cut bones or frozen food?
LOKI suits what you want to cut.
- The 280 mm blade gives you room to slice a fillet in long, steady strokes.
- The small hollows on one side help slices come away from the blade.
- Ground on both sides, so it is easier to use and sharpen than a traditional yanagiba.
Arrives sharp. 100-day returns.
LOKI works for roasts too.
- The 280 mm blade gives you room to carve long, thin slices from a roast.
- A long, steady stroke gives cleaner slices than sawing back and forth.
- Keep the knife away from bones. Cut the meat off the bone first.
Arrives sharp. 100-day returns.
ODIN is probably the better fit.
ODIN is a chef’s knife with a 245 mm blade. It handles vegetables, herbs, fish and boneless meat. LOKI is a specialist for long cuts through fish and roasts.

LOKI is not made for bones or frozen food.
Bones, fish bones and frozen food can chip the thin edge. Let fish thaw, and cut meat off the bone first. For raw fish and boneless roasts, LOKI is a good choice.
After mocking the gods at their feast, Loki fled and hid in a river in the shape of a salmon. The gods caught him in a net he had invented himself.
Two sides.
One clean cut.
Each face of LOKI’s blade has its own finish. On one, polished steel stands against the darker forged surface. On the other, the hammered surface is ground flat so only small hollows remain. They reduce contact with the food and help slices come away from the blade.
The long blade lets you slice fish, boneless meat and roasts with long, controlled strokes, so you cut neat slices without sawing back and forth.
Unlike a traditional single-bevel sashimi knife, LOKI is ground on both sides. That makes it easier for most people to use and to sharpen.
From heat
to deep cold.
The steel is vacuum hardened and deep cooled in liquid nitrogen at −196 °C. The result is a hardness of 61 HRC.
61 HRC.
The edge needs a little care.
Hardness is one of the factors that affect how long a knife stays sharp. For comparison, a typical German chef’s knife is made of X50CrMoV15 steel, which is normally hardened to between 54 and 58 HRC. But hardness is only part of it. The blade’s geometry, the sharpening and how the knife is used matter too.
At 61 HRC, LOKI should be used with care. Keep it away from bones, fish bones and frozen food, and do not use it on glass or stone boards.
The scale starts at 54 HRC. The ranges are references from MachineMFG and the steel mill SIJ Metal Ravne, not measurements of these particular knives.

In Germanic tradition, the oak is linked with Thor, the god of thunder. The wood gave the RAW OAK series its name.
LOKI’s handle is made from two-tone stabilised oak. The brass end weight helps balance the long blade.

LOKI
or ODIN?
LOKI has the longer, slimmer blade. Choose it for long cuts through fish and roasts. Choose ODIN if you want one knife that also chops vegetables and herbs.

Simple care.
So it lasts.
Wash by hand
Wash the knife by hand, dry it straight away and put it away. Never in the dishwasher.
Use a wooden board
A board of wood or suitable plastic protects the edge. Avoid glass, stone and metal.
Look after the wood
If the handle starts to feel dry after months of hand washing, rub in a little food-safe wood wax.
Learn to sharpen
We do not offer a sharpening service. Jacob teaches you to sharpen your knives yourself. Read more about Jacob’s sharpening.
Before you decide.
Is a sashimi knife worth it if I already have a chef’s knife?
If you often slice raw fish, salmon or roasts, yes. With a shorter chef’s knife, you may need several strokes to slice a large fillet. LOKI’s 280 mm blade gives you room for long, steady strokes and neater slices. If you mostly cook vegetables, a chef’s knife like ODIN is the better buy. And you can return LOKI within 100 days, for any reason.
Is LOKI a yanagiba or a sujihiki?
LOKI has the long, slim shape of a yanagiba, but it is double-bevelled like a sujihiki rather than single-bevelled like a traditional yanagiba. It is made for long slicing cuts through raw fish and boneless meat, and the double bevel makes it easier for most cooks to use and sharpen.
Can I use LOKI if I am left-handed?
Yes. The blade is ground on both sides, so it works for right- and left-handed cooks.
Is 280 mm too long for a normal kitchen?
The blade is 280 mm and the knife is 420 mm overall. The long blade is useful for slicing large fillets, but it takes up more room than an ordinary chef’s knife. Make sure you have enough space on your board to work comfortably.
Can LOKI slice roasts and cooked meat too?
Yes. LOKI is made for raw fish, boneless meat and roasts. Cut the meat off the bone first. Bones and frozen food can chip the edge.
More questions
Can LOKI rust?
LOKI uses stainless 9Cr18MoV steel, which is more resistant to rust than carbon steel. Still wash it by hand and dry it straight away, especially after fish and acidic food.
Is LOKI hard to keep sharp?
LOKI has a double-bevel edge, so you can sharpen it like an ordinary double-bevel kitchen knife. Its length takes a little more care. Jacob shows you how to sharpen it, and we have sharpening sets for different levels of experience.
Is the knife sharp on arrival?
Yes. Every knife gets its final edge by hand, and Jacob checks the blade and edge of every knife before it ships. Unpack it carefully.
What steel is the blade made of?
Stainless 9Cr18MoV steel, vacuum hardened and deep cooled in liquid nitrogen. The hardness is 61 HRC. For comparison, a typical German chef’s knife is made of X50CrMoV15 steel, which is normally hardened to between 54 and 58 HRC.
Can I return the knife?
Yes. You have 100 days to return it, for any reason. If you change your mind, you pay the return postage. If the knife is faulty, we pay the return postage. Our returns policy does not affect your statutory rights.
Can the knife go in the dishwasher?
No. Wash the knife by hand, dry it straight away and put it away. A dishwasher can damage both the edge and the oak handle.
How do I keep the oak handle looking good?
If the oak starts to feel dry after months of hand washing, rub in a little food-safe wood wax.
Why is the knife called LOKI?
Every knife in the RAW OAK series carries the name of a god from Norse mythology. Loki is the shape-shifter, never quite one thing. LOKI’s blade has two different sides: two finishes, one blade.
One long stroke.
One clean cut.
