The making
YOLO III was designed by Jacob Bech and Shanru Lin, from the first sketch to the finished edge. Every detail was tried, argued over, and tried again. Each of the six knives in EX-ANIMO III has its own finish. That is by design, not by chance. On YOLO III, that finish is a blade hand-forged on a power hammer, with fine, irregular marks from the forging dies etched until you can feel them, a tall blade with an angled tip, and a handle made from three separate pieces of golden sandalwood.

- Ground by hand, then approvedEvery edge is ground by hand. Jacob examines each finished knife before it is approved. A numbered certificate comes with the knife.
I have worked on its shape and balance for repeated use at the chopping board. With YOLO III, I want to remind you that life is short: make room for what matters, including the meals you prepare and the people you share them with.

The steel, certified
- IA documented core. We keep the mill certificate for our cobalt-bearing VG10 core and publish its recorded composition, so you can see which steel forms the cutting edge.
- IILayers you can feel. Deep acid etching leaves a relief in the steel itself, not a pattern printed or lasered onto the surface.
- IIIA mark engraved, not lasered. The motif and name are cut by EDM to avoid deforming the blade. It costs more time, labor and electricity.
- IV62 HRC, tested. Oil quenched and tempered; the hardness comes from our production testing, not from the certificate.
- VAn edge ground by hand. Ground by Jacob and his team in the workshop, not on a production line. Every knife examined by Jacob before approval.
The certificate describes the annealed raw bar, 236 HB, and does not certify layer count or finished hardness; the 62 HRC comes from our own testing after heat treatment. No single element makes a knife; the core, the heat treatment and the geometry do.

Shanru Lin and Jacob Bech gave YOLO III its name as a reminder to live. YOLO stands for you only live once. On the right side of the blade, the Chinese calligraphy 人生苦短及時行樂 carries the same thought: life is short, enjoy it while you can. It is engraved directly into the steel by EDM, next to the RICEKNIFE name.
The message is for the friend who has been talking about that trip, that course or that restaurant for years and still has not gone, and for anyone who keeps saying later. Make room for what matters, including the meals you prepare and the people you share them with. We want that thought to stay with you in the everyday act of making a meal.

The vegetable knife with room for your knuckles.
Tall enough to keep your knuckles clear of the board, with an angled tip that gives a defined point for small, precise cuts. Made for onions, cabbage, herbs and the day’s vegetables. A compact knife with room for the hand and a clear direction in the movement, from the first onion to the last handful of herbs.

YOLO III is hand-forged on a power hammer and finished by hand. Rough forging dies leave fine, irregular marks in the hot steel, and deep acid etching brings the Damascus layers up around them as a relief with physical depth on the flat of the blade, away from the edge. The pattern changes with the light, and you can feel its texture under your fingertips.
The calligraphy 人生苦短及時行樂 and the RICEKNIFE name on the right side are engraved directly into the steel by EDM, no laser. Run a finger over them and you will feel the edges. The message is on the blade, so you do not have to write it on the card: life is short, enjoy it while you can.
Three pieces of golden sandalwood.
The handle has three sections of golden sandalwood, each cut from a separate piece of wood. Their grain meets differently from knife to knife, so the composition of every handle is its own and cannot be repeated exactly. The golden-brown color and the dark stripes in the grain are the wood itself. The wooden sections are hand-finished with a wood wax Jacob makes himself from organic beeswax and food-grade mineral oil.
Wash the knife by hand and dry it straight away. Do not leave the wooden handle soaking, and keep the knife out of the dishwasher. Because of the wax finish, routine oiling is not required; wipe the handle dry with the blade. Treated that way, the handle is made to last as long as the blade.

Warning: this knife arrives sharper than most people expect. Unpack it with care and keep it away from children.
The core is a cobalt-bearing VG10 steel, oil quenched and tempered to 62 HRC, then hand sharpened on stones by Jacob and his team in the workshop. In the film above, at the very end, he tests it the way we test every knife: a sheet of printer paper, no pressure, one clean cut.
Cut on wood or suitable plastic, never on glass, stone or metal. No bones, no frozen food, no twisting in the cut. Wash by hand and dry straight away.

Is YOLO III a K-tip santoku?
YOLO III has the tall, compact blade of a santoku, 16.8 cm long, with an angled tip instead of the usual rounded sheepsfoot tip. It is Riceknife’s own design for vegetables and everyday preparation: the tall blade gives your knuckles clearance, and the defined tip helps with small cuts. It is at its best on vegetables, but it handles meat, fruit and most everyday preparation just as well; just keep it away from bones and frozen food. The core is cobalt-bearing VG10 and the knife is finished by hand.
What does the Chinese writing mean?
The blade carries 人生苦短及時行樂: life is short, enjoy it while you can. YOLO stands for you only live once. Both the calligraphy and the RICEKNIFE name are engraved directly into the right side of the blade by EDM. Shanru Lin and Jacob Bech gave the knife its name as a reminder to live.
Is YOLO III a good gift?

How does YOLO III differ from TIGRITUDE III?
Both are tall blades for vegetables, both hand-forged on a power hammer and finished with deep acid etching. YOLO III has a 16.8 cm santoku blade with an angled tip and a handle of three pieces of golden sandalwood; it weighs 183 g. TIGRITUDE III has a 20.8 cm kiritsuke blade, longer and with a straighter edge, and a handle of snakewood and dark rosewood; it weighs 185 g. If you want a compact knife for onions, herbs and the day’s vegetables, choose YOLO III; for a longer blade that also covers fish and boneless meat, choose TIGRITUDE III.
Why does YOLO III cost more than an ordinary VG10 Damascus knife?
The steel: not every steel sold as VG10 is the same, and ours is a cobalt-bearing VG10 that comes with a mill certificate, and we publish the figures on it. It is oil quenched and tempered to 62 HRC, and the edge is still ground by hand. The surface: the blade is hand-forged on a power hammer, the forging dies leave fine, irregular marks, and deep acid etching then brings out a real relief you feel under your fingertips, not a printed or lasered pattern. The finish: the calligraphy and the name are engraved by EDM, every edge is ground by hand, and every knife is examined before it is approved.
