The making

Six handmade, limited edition knives. Each with a story of its own and Damascus you can feel. EX-ANIMO III was designed by Jacob Bech and Shanru Lin, from the first sketch to the finished edge: a petty utility knife, a santoku vegetable knife, a kiritsuke, two gyuto chef’s knives and a compact Chinese cleaver. Each of the six has its own blade shape, its own materials and its own motif. That is by design, not by chance. Knife stand sold separately (6-slot oak knife stand).

About the steel

73 layers. One cobalt-bearing VG10 core.

62 HRC. Ground by hand.
The blade has 73 layers in total, including the cobalt-bearing VG10 steel core that forms the edge. The Damascus layers on both sides are 316L stainless steel. Each blade is oil quenched and tempered to 62 HRC, and every edge is ground by hand. A higher layer count does not on its own make a better edge; the core steel, the heat treatment and the geometry do.

The steel, certified

The cobalt-bearing VG10 core is documented by its mill certificate, which we keep. These are the percentages printed on it. They describe the core, not all 73 layers.

  • IA documented core. We keep the mill certificate for our cobalt-bearing VG10 core and publish its recorded composition, so you can see which steel forms the cutting edge.
  • IILayers you can feel. Deep acid etching leaves a relief in the steel itself, not a pattern printed or lasered onto the surface.
  • IIIA mark engraved, not lasered. The motif and name are cut by EDM to avoid deforming the blade. It costs more time, labor and electricity.
  • IV62 HRC, tested. Oil quenched and tempered; the hardness comes from our production testing, not from the certificate.
  • VAn edge ground by hand. Ground by Jacob and his team in the workshop, not on a production line. Every knife examined by Jacob before approval.

The certificate describes the annealed raw bar, 236 HB, and does not certify layer count or finished hardness; the 62 HRC comes from our own testing after heat treatment. No single element makes a knife; the core, the heat treatment and the geometry do.

About the name

Six motifs with their own meanings.

Six stories in the steel. Two hundred of each in the first release, every one numbered.

Each knife carries its own motif and the RICEKNIFE name on the right side of the blade, engraved directly into the steel by EDM.

VALKYRIE III: runes in Younger Futhark, falla í orrustu, eigi níð, to fall in battle, not in dishonor. A reminder to stand by who you are and what you believe in, even when life is difficult.
AMOR II: a heart wrapped in a ribbon with the words Amor vincit omnia, love conquers all. A reminder to appreciate the love around you.
YOLO III: the calligraphy 人生苦短及時行樂, life is short, enjoy it while you can. The name stands for You only live once.
TIGRITUDE III: a tiger’s head, redrawn for this edition. A tiger does not proclaim its tigritude, it pounces: knowing your own strength and daring to let your voice be heard.
CARBON I: carbon’s square from the periodic table, C, 6 and 12.011. Every atom of carbon was made inside a star; we are stardust. It links the carbon fibers of the handle with life and endurance.
SHARK II: a shark with the words In a world of fish, be a shark within its body. Staying true to yourself and choosing your own direction.

The first release includes 200 of each design. Each knife in the set comes with its own numbered certificate.

Choose the full set to own all six original Danish designs and the stories behind their motifs, from CARBON I to SHARK II. These are knives to collect and use: a petty utility knife, a santoku vegetable knife, a kiritsuke, two gyuto chef’s knives and a compact Chinese cleaver. Every blade has 73 layers with a cobalt-bearing VG10 core, oil quenched and tempered to 62 HRC. The two gyuto chef’s knives suit similar tasks, with different blade lengths, handle materials and visual details.

About the finish

Six surfaces you can feel.

Hammer, die and acid.

Each of the six blades has 73 layers in total, including the cobalt-bearing VG10 cutting core; the Damascus layers on both sides are 316L stainless steel. Three of the six are hand-forged on a power hammer. YOLO III and SHARK II carry the marks of their forging dies, and TIGRITUDE III is stretched by hand on the power hammer, which leaves a mountain-range pattern that differs from knife to knife. CARBON I has small triangles pressed into the blade with a tool we make ourselves by EDM. AMOR II has a repeated heart pattern pressed into the hot steel with a die of our own making. VALKYRIE III has long Damascus lines. Deep acid etching then brings the layers up on all six blades as a physical relief you can feel on the flat of the blade, away from the edge.

On all six, each knife’s own motif and the RICEKNIFE name are engraved directly into the right side of the blade by EDM, not laser. We chose EDM over laser marking because of the risk of deforming the blade; it takes more time, labor and electricity, and that is a deliberate choice to preserve the blade’s shape. The RICEKNIFE and LINBECH logos on the left side of all six blades are stamped into the steel. All six are finished by hand, and Jacob examines every knife before it is approved.

About the handle

Six handles, six materials.

Wood, G10, carbon fiber, brass.

No two of the six handles are alike. CARBON I has carbon fiber on a full tang; YOLO III has three pieces of golden sandalwood, each cut from a separate piece of wood; TIGRITUDE III combines snakewood and dark rosewood; AMOR II has red and black G10 on a full tang; VALKYRIE III has stabilized red oak with rings of blue G10 and brass; and SHARK II has stabilized hardwood with orange G10 liners and brass pins on a full tang. The wooden handles are hand-finished with a wood wax Jacob makes himself from organic beeswax and food-grade mineral oil, so routine oiling is not required; wipe them dry with the blade. G10 and carbon fiber absorb very little moisture and need no oiling; wipe them dry with the blade.

Wash every knife by hand and dry the blade and handle after use. No soaking, and keep them out of the dishwasher. Treated that way, each handle is made to last as long as its blade.

About the edge

Warning: this knife arrives sharper than most people expect. Unpack it with care and keep it away from children.

The core is a cobalt-bearing VG10 steel, oil quenched and tempered to 62 HRC, then hand sharpened on stones by Jacob and his team in the workshop. In the film above, at the very end, he tests it the way we test every knife: a sheet of printer paper, no pressure, one clean cut.

Cut on wood or suitable plastic, never on glass, stone or metal. No bones, no frozen food, no twisting in the cut. Wash by hand and dry straight away.

EX-ANIMO III is the third generation of the series, and every generation has been a step on from the last. EX-ANIMO III has a cobalt-bearing VG10 core with a mill certificate we can show you, a motif and name engraved by EDM instead of laser, a deeper etch you can feel, and an edge ground by hand by Jacob and his team. We do not release a new series until we are sure it is a step forward. This is the best we have made so far, and the next one will have to beat it.

What is included in the EX-ANIMO III set?

Six knives: CARBON I (15 cm petty utility knife), YOLO III (16.8 cm santoku vegetable knife), TIGRITUDE III (20.8 cm kiritsuke), AMOR II (23 cm gyuto chef’s knife), VALKYRIE III (23.7 cm gyuto chef’s knife) and SHARK II (17.2 cm compact Chinese cleaver). Does every knife in the set have its own numbered certificate?

Yes. Each of the six designs is made in a first release of 200, and each knife in the set comes with its own numbered certificate. The number stays with the knife.

Are all six knives made from the same steel?

Which knife is for what?

CARBON I, the petty, is for herbs, fruit and the small jobs between meals. YOLO III, the santoku, is the vegetable knife, with a tall blade for knuckle clearance. TIGRITUDE III, the kiritsuke, is for vegetables, fish and boneless meat. AMOR II and VALKYRIE III are gyuto chef’s knives for the same tasks, one heavier and one longer. SHARK II, the compact Chinese cleaver, is for vegetables and boneless meat, not for bones. Together the set covers vegetables, fruit, herbs, fish and boneless meat; it does not include a bread knife.

Is the EX-ANIMO III set a good gift?

Yes, for the big occasions: a wedding, Christmas for the whole family, a 50th birthday, a retirement, a house that has finally been built, or a partner or colleague you want to thank properly. Couples put it on the wedding list; companies give it to the person who made the year. Which single knife should I give if the set is too much?

Can the knives be engraved or gift wrapped?

Yes. We can engrave a name, a date or a short line, and we can gift wrap the set. Is the knife stand in the photo included?

No. The knife stand is sold separately; the one in the photo is our 6-slot oak knife stand. The set is the six knives and their six numbered certificates.

Why does the set cost more than six ordinary VG10 Damascus knives?

The steel: not every steel sold as VG10 is the same, and ours is a cobalt-bearing VG10 that comes with a mill certificate, and we publish the figures on it. It is oil quenched and tempered to 62 HRC, and every edge is still ground by hand. The surfaces: three blades are hand-forged on a power hammer, two carry a pattern pressed into the steel with a die we make ourselves, one carries long Damascus lines, and all six are deep etched, so you feel a real relief under your fingertips, not a printed or lasered pattern. The finish: six motifs and the name are engraved by EDM, every edge is ground by hand, and every knife is examined before it is approved.

Are the motifs laser engraved?

No. On all six knives, the motif and the RICEKNIFE name are engraved directly into the right side of the blade by EDM, not laser. The RICEKNIFE and LINBECH logos on the left side are stamped into the steel. The surface patterns come from the power hammer, from dies we make ourselves, or from the Damascus layers, and are brought out by deep acid etching.

Is the VG10 in EX-ANIMO III standard VG10?

It is a cobalt-bearing VG10 steel, and it comes with a mill certificate that we keep. The certificate lists the core steel as C 1.10 %, Cr 14.56 %, Mo 0.84 %, Co 1.54 %, V 0.25 % and W 0.11 %. We publish these figures so you can compare them with any other knife yourself; we do not claim they are better than the standard.

How do I care for six knives with six different handles?

The same way for all six. Wash by hand and dry the blade and handle after use. No soaking, no dishwasher. Wood or suitable plastic board. No bones, frozen food or twisting. The wooden handles of YOLO III, TIGRITUDE III, VALKYRIE III and SHARK II are already hand-finished with a wood wax Jacob Bech makes from organic beeswax and food-grade mineral oil, so routine oiling is not required; wipe the handle dry with the blade. The G10 of AMOR II and the carbon fiber of CARBON I absorb very little moisture and need no oiling either; wipe them dry with the blade. Protect the edges in storage.
