Four woods, under the same moon
YIN, QING, YUAN and QUE take their names from 陰晴圓缺 in Su Shi’s poem Shuidiao Getou. The poem places parting and reunion beside the moon’s changing appearance, and closes with a wish that people separated by distance may share its light.
Choose a pair as you lay the table, or let each guest choose. Each pair shares its wood; natural colour and grain give individual handles their own expression.

YIN
Bocote
The clouded moon. Bocote has a golden tone and pronounced grain.

QING
European Boxwood
The clear moon. European Boxwood adds a lighter tone, in keeping with clarity and harmony.

YUAN
Cocobolo
The full moon. Cocobolo brings warm, reddish-brown tones to the knife and fork handles.

QUE
Ebony
The waning moon. Dark Ebony gives the set its strongest contrast, with a name that connects endings and new beginnings.

“Very thin. Very sharp. But with real substance.”
A fine edge with substance in the hand
In the ECLIPSES III knife certificate, Jacob Bech explains why the knives were made: he had struggled to find good steak knives that were both thin and solid. He wanted a steak knife that could cut cleanly without serrations and still feel substantial. ECLIPSES III has a finely ground blade and a plain edge that receives its final sharpening by hand. The wooden handle and thick stainless-steel pommel give the knife its substance.
These are steak knives and kitchen utility knives. Use them on a suitable wooden cutting board for vegetables, sausage and boneless meat. Wash and dry them before moving to the table for steak or grilled food. A controlled drawing stroke lets the continuous edge do its work.
Keep the fine edges clear of bones and frozen ingredients. Avoid twisting a blade in a cut or pressing and scraping its edge against a plate.
A fork with its own shape
The ECLIPSES Damascus fork took four years to develop. Jacob spent almost three years and at least seven design iterations finding its shape. Once he had the curve he wanted, another year went into making the bending process consistent.
A fork has to pierce and hold food at a different angle from a knife. The curved head and long, thin tines were shaped for that job. Added thickness in the body, guard and pommel gives the fork weight while keeping its slender outline; the shared steel and paired woods connect it visually to the knife.
The work behind the set
The four woods were chosen for density as well as appearance, giving each knife its own balance and character within the shared shape. These selected hardwoods have higher material costs and greater hardness than common, lower-cost handle woods. The stainless-steel pommel adds substance at the end of the knife handle to counterbalance the thin blade.
Preparing the wooden knife handles takes two months, including vacuum stabilisation. Each is then waxed and polished by hand with Danish beeswax blended with food-grade mineral oil. The finish brings out the grain and can be renewed over time.
Made in small batches, the set pairs these knives with the separately developed Damascus forks. The knives can earn their place during food preparation as well as at dinner; the forks complete four matching place settings.
What arrives
Both the knives and the forks are made from 67-layer Damascus steel with a VG10 core. RICEKNIFE specifies 62 ± 2 HRC for both knives and forks. Each knife has a plain, non-serrated edge and a stainless-steel pommel.
ECLIPSES III is a RICEKNIFE design by Scandinavian chef Jacob Bech and Creative Director Shanru Lin.

Care for the edge and the wood
- Hand wash
- Dry promptly
- No dishwasher
- Renew with wax
Wash every knife and fork by hand with mild detergent and a soft sponge, then dry promptly. Keep wooden handles out of the dishwasher and do not leave them soaking. The knife handles’ vacuum stabilisation does not replace this care.
Store the pieces dry, with the knife edges protected from other utensils. Use the fork tines for piercing and holding food, not for levering or prying. Renew wooden handles with suitable handle-care wax when needed. Sharpen the knife edges as they wear, and keep these very sharp knives safely out of children’s reach. Read the knife-care guide for further guidance.

For the curiousAbout the steel: VG10, element by element+
ABOUT THE STEEL
VG10, element by element
The supplier’s mill certificate records the composition of one steel heat. RICEKNIFE identifies this as the material used for the VG10 cores in ECLIPSES knives and forks. The figures do not describe the outer Damascus layers.
One material, two jobs
In the knife, the steel works with the thin grind, sharpening and heat treatment to form the cutting edge. Actual edge life also depends on the cutting surface and how the knife is used.
The fork has a different job: piercing and holding food. When choosing a fork, consider its curved head, long, slender tines and feel in the hand rather than knife-edge performance.
A comparison with X50CrMoV15 knife steel
X50CrMoV15 (1.4116) is a conventional stainless knife steel. The table compares the supplied VG10 heat with Lucefin’s published reference ranges for that grade.
| Element | Supplied VG10 heat (%) | X50CrMoV15 reference (%) |
|---|---|---|
| Carbon · C | 1.1 | 0.45–0.55 |
| Chromium · Cr | 14.56 | 14.0–15.0 |
| Molybdenum · Mo | 0.836 | 0.50–0.80 |
| Vanadium · V | 0.254 | 0.10–0.20 |
The clear compositional difference is carbon: this reported heat contains more than the reference range for X50CrMoV15. With suitable heat treatment, higher carbon content can support hardness and wear-resistant carbides. Chromium is in a similar range, so this table does not establish better corrosion resistance.
This compares one reported heat with a grade reference range. Lucefin’s published datasheet lists permitted deviations for product analysis. The small molybdenum and vanadium differences do not establish a performance advantage. An element missing from the reference table is not necessarily absent from the steel.

Supplier mill certificate TGB00091853 · heat 2551785B · 24 September 2025. Values retain the precision printed on the document.
The certificate covers annealed flat bar and records 236 HB; its quenched-and-tempered HRC field is blank. The separately stated 62 ± 2 HRC is RICEKNIFE’s product specification. The certificate does not identify finished ECLIPSES batches or test their performance. No separate benefit is claimed for the reported cobalt or tungsten content.
Questions
Does eight pieces mean eight place settings?
It means four knives and four forks, serving four people. The set includes two black gift boxes and a RICEKNIFE knife certificate.
What makes this set worth its price?
The set includes four exceptionally sharp steak and utility knives and four matching Damascus forks developed over four years. The knives’ final edge-sharpening step is done by hand. The wooden knife handles go through a two-month preparation process, including vacuum stabilisation, before hand waxing and polishing. Four distinct woods, stainless-steel knife pommels and two black gift boxes complete the set. It suits someone who values those materials and is willing to care for them by hand.
Are the knives serrated, and how are their edges maintained?
They have continuous, non-serrated edges for controlled slicing. The edges can be sharpened again as they wear. Use a cutting board for preparation and avoid scraping the edge against hard dinner plates.
Can all four knife-and-fork pairs be the same wood?
Yes. Write Bocote, European Boxwood, Cocobolo or Ebony in the order notes at checkout. If you would like help choosing, contact us. Natural grain, colour and weight will still vary between handles.
Can the stabilised knife handles go in a dishwasher?
No. Wash every knife and fork by hand and dry promptly. Vacuum stabilisation does not make the knife handles dishwasher-safe.
How will the knives and forks feel in the hand?
The knives are 228 mm long and the forks 223 mm. The knife weights range from 102 to 111 g, and the forks from 69.2 to 71 g. Thin knife blades are balanced by substantial wooden handles and stainless-steel pommels. The four woods were chosen partly for density, giving each piece its own character.
