High-carbon steel is valued by chefs and knife enthusiasts for a reason.
A high-carbon steel knife can become extremely sharp and is easy to sharpen because it does not contain chromium carbides.
However, it is not stainless and therefore requires that you wipe it dry after use
and apply oil or wax from time to time.
Normally, these knives arrive completely polished, and they start taking on color immediately during use.
They are also highly prone to rusting.
This has given high-carbon steel knives a bad reputation among everyday households:
“difficult to maintain and they rust.”
This is where my pre-patina comes in.
The dark oxide layer creates a protective surface that prevents the knife from rusting.
It also gives it a raw, rugged look.
Each knife patinates differently, which makes every knife unique.
