Then BALDR should wait.
BALDR is extremely sharp. Children may only use it under the direct guidance and constant supervision of an adult. Wait until you can cook together.
Baldr is Odin’s son and the god of light, loved by everyone. His mother Frigg made everything in the world promise not to harm him. Only the little mistletoe was overlooked.
Not a toy.
A real tool.
“I created BALDR because I wanted my son Balthazar to have his own first knife. The likeness between the names BALDR and Balthazar made the choice personal. But the knife itself had to be taken seriously. I did not want to give him a toy that looked like a knife. I wanted to make a real tool that could follow him as his skills grew.”
Jacob Bech, knife maker and chef (translated from Jacob’s Danish words)
BALDR has a sturdy, stable blade and a sharp edge ground on both sides. The compact size makes it easier to control. The double-bevel edge is easy to maintain. The blade can also be thinned behind the edge later, as the user becomes more skilled.
It also suits smaller hands.
From heat
to deep cold.
The steel is vacuum hardened and deep cooled in liquid nitrogen at −196 °C. The result is a hardness of 61 HRC.
61 HRC.
The edge needs a little care.
Hardness is one of the factors that affect how long a knife stays sharp. For comparison, a typical German chef’s knife is made of X50CrMoV15 steel, which is normally hardened to between 54 and 58 HRC. But hardness is only part of it. The blade’s geometry, the sharpening and how the knife is used matter too.
At 61 HRC, BALDR should be used with care. Keep it away from bones and frozen food, and do not use it on glass or stone boards.
The scale starts at 54 HRC. The ranges are references from MachineMFG and the steel mill SIJ Metal Ravne, not measurements of these particular knives.

In Germanic tradition, the oak is linked with Thor, the god of thunder. The wood gave the RAW OAK series its name.
BALDR’s handle is stabilised oak in a light tone. The brass end weight helps balance the knife.

Before you decide.
Is BALDR a good first real knife for my child?
That is what it is made for. Jacob created BALDR for his son as a real knife, not a toy. The short 105 mm blade is easier to control. BALDR is extremely sharp, so a child may only use it with an adult beside them.
How old should the child be?
We do not specify a minimum age. What matters is whether the child can follow instructions and handle the knife carefully. An adult must provide direct guidance and constant supervision. Start with simple tasks such as cutting cucumber or banana, and show the child how to keep their fingers clear of the edge.
Isn’t a sharp knife more dangerous than a plastic kids’ knife?
A blunt knife can require more force and be harder to control. A sharp knife needs less force to cut, but it can also cause serious cuts. BALDR is extremely sharp. Children may only use it under the direct guidance and constant supervision of an adult. Store it out of children’s reach.
Will my child outgrow it, or can adults use it too?
BALDR is a real santoku in a small format. It can grow with the child’s skills, and adults with small hands can also use it for smaller kitchen tasks. The edge can be thinned later, as the user’s skills develop.
Is BALDR good for small hands?
Yes. The blade is 105 mm, the knife is 215 mm overall, and it weighs 73 g. Its compact size makes it easier to handle when working with small ingredients.
More questions
Is BALDR a good gift for a child who loves cooking?
Yes, if an adult will cook together with the child. The knife arrives sharp and was designed in Denmark by Jacob Bech and Shanru Lin. Tell the child it is a real knife, and store it out of reach.
Can left-handed children use BALDR?
Yes. The edge is ground on both sides, so the knife works for right- and left-handed cooks.
Will the blade chip if a child drops it?
The steel is hardened to 61 HRC, and a fall onto a hard floor can chip the edge or the tip. Teach the child to lay the knife flat on the board when it is not in use.
What steel is the blade made of?
Stainless 9Cr18MoV steel, vacuum hardened and deep cooled in liquid nitrogen. The hardness is 61 HRC. For comparison, a typical German chef’s knife is made of X50CrMoV15 steel, which is normally hardened to between 54 and 58 HRC.
Can I return the knife?
Yes. You have 100 days to return it, for any reason. If you change your mind, you pay the return postage. If the knife is faulty, we pay the return postage. Our returns policy does not affect your statutory rights.
Can the knife go in the dishwasher?
No. Wash the knife by hand, dry it straight away and put it away. A dishwasher can damage both the edge and the oak handle.
How do I keep the oak handle looking good?
If the oak starts to feel dry after months of hand washing, rub in a little food-safe wood wax.
Do you offer sharpening?
No, we do not offer a sharpening service. Jacob teaches you to sharpen your knives yourself, and we have sharpening sets for beginners, home cooks and professionals.
Why is the knife called BALDR?
Every knife in the RAW OAK series carries the name of a god from Norse mythology. Baldr is Odin’s son and the god of light. The likeness to the name of Jacob’s son, Balthazar, made the choice personal.
