View setRICEKNIFE · RAW OAK · Knife set with 4 kitchen knives
Made to last a lifetime. Designed in Denmark by Jacob Bech and Shanru Lin.
Four knives. Four jobs. One steel, hardened to 61 HRC. Four oak handles, no two alike.
In the set · 4 knives

Chef’s knife
Jacob’s signature shape: a long, tall blade with a kiritsuke tip for full-length slicing cuts.

Santoku knife · bestseller in the series
The everyday knife. Shorter than ODIN, with more steel behind the edge.

Bread knife
Deep serrations that cut through the crust in long, steady strokes, so you do not need to press down on the loaf.

Utility knife
Very thin and light. For garlic, mushrooms, fruit and herbs.
The steel
61HRC
RAW OAK is made from 9Cr18MoV steel, vacuum-hardened and then cryogenically treated using liquid nitrogen. This gives a hardness of 61 HRC. Many kitchen knives sit at 55–58 HRC.
The trade-off is that hard steel is less forgiving, so keep these knives away from bones and frozen food, and off glass or stone boards.
The scale starts at 54 HRC so the differences are easy to see. Hardness varies with heat treatment. The steel ranges are quoted from MachineMFG and the ZWILLING figure from the manufacturer. They give context; they are not results from a side-by-side test of these knives.

The handle
Every handle is stabilised oak. A brass weight set into the end of the handle balances the knife. Grain and colour vary from knife to knife, so your set is yours alone.
If the oak feels dry after many washes, sand it lightly with 1500-grit sandpaper and rub in a food-safe wood wax made from mineral oil and beeswax.
Before you buy
For everyday cooking. None of the knives is for bones or frozen food.

Four or six? The 6-knife set also includes THOR, the Chinese chef’s knife, and BALDR, the compact santoku. Choose four if you want the essentials. Choose six if you cut a lot of vegetables or want a small knife for a child who is learning to cook. A child may only use BALDR under the direct supervision of an adult.
See the 6-knife setHow to use the knives
Each knife has its own cutting motion. Here is how to use the four knives, step by step.
Use an end-grain oak cutting board if you can. The fibres give way to the edge. Side-grain wood or suitable plastic boards can also be used.
Draw the long blade through the food in one smooth cut from heel to tip. For herbs, rock the knife on the blade’s gentle curve with the tip on the board.
Cut down and slightly forward in one movement. The santoku’s flat edge suits vegetables, fish and boneless meat. Keep the side of the blade against the knuckles of your other hand.
Use the full length in long, steady sawing strokes and let the serrations do the work. Do not press down: that squashes the crumb.
Garlic, shallots, mushrooms, fruit and herbs. Hold it like a small chef’s knife on the board, and keep the fingertips of your other hand curled in.
After use, wash the knife by hand in warm water with a little washing-up liquid. Rinse it, dry it straight away with a clean tea towel and put it away. Never put it in the dishwasher.
Care
Wash each knife by hand, dry it straight away and put it away. No dishwasher. That is the daily routine.
It is stainless steel and needs neither oil nor a patina for protection. Wash the blade in warm water with a little washing-up liquid. Rinse it and dry it straight away with a clean tea towel. Cut on a wooden or suitable plastic board, not on glass, stone or metal.
After many washes the oak may feel a little dry. Sand it lightly with 1500-grit sandpaper and rub in a food-safe wood wax. Jacob Bech makes his own from mineral oil and beeswax.
RICEKNIFE does not sharpen or repair knives. Instead, Jacob Bech teaches you to sharpen them yourself with his sharpening guides, three diamond sharpening sets and lessons in the workshop in Greve, south of Copenhagen.

Knives this sharp only stay sharp if you maintain them. Jacob spent five years on the sharpening system below and made a video for each set. Choose the set that suits your cooking routine and sharpening needs. TYR has a serrated edge: ask Jacob how to maintain it before you sharpen it yourself.

For you if you are new to sharpening on stones. Practise in short sessions and learn the technique at your own pace.

For you if you cook most days and want to keep your knives sharp with regular maintenance.

The full system Jacob uses in the workshop, for taking the edge as far as it will go.
