How do I use the RICEKNIFE Sharpening Set Chef?

Use the #250 side of RICEKNIFE’s plated diamond stone only if the edge needs reshaping, then sharpen on #1000 and refine on #3000. Jacob Bech finishes on the leather strop with 1.5 micron diamond compound.

Jacob Bech’s route with the Chef set

  1. Secure the stone. Place RICEKNIFE’s plated diamond stone in the stone holder.
  2. #250 plated diamond. If the edge needs reshaping, sharpen on the #250 side of RICEKNIFE’s plated diamond stone with light to moderate pressure until a small burr forms along the entire edge.
  3. Dampen #1000. Dampen RICEKNIFE’s #1000 resin-bonded diamond stone with water, without soaking.
  4. #1000 resin-bonded. Sharpen on RICEKNIFE’s #1000 resin-bonded diamond stone with light to moderate pressure, following the knife’s existing edge angle.
  5. Dampen #3000. Dampen RICEKNIFE’s #3000 resin-bonded diamond stone with water.
  6. #3000 resin-bonded. Refine the edge on RICEKNIFE’s #3000 resin-bonded diamond stone, moving from light pressure to very light strokes.
  7. Leather strop. Finish on the leather strop with RICEKNIFE’s 1.5 micron diamond stropping compound, keeping the cutting edge trailing.

Questions
Should I choose the Chef or the Professional sharpening set?

RICEKNIFE’s Chef set ends at #3000, where Jacob Bech finishes most of his own knives. RICEKNIFE’s Professional set adds #6000 and #12000 for detailed finishing work, such as polishing after thinning.

Is 3000 grit enough to finish a kitchen knife?

Yes, RICEKNIFE’s #3000 resin-bonded diamond stone can be the final stage for a sharp working edge before the leather strop. Jacob Bech says the Chef set suits home cooks as much as chefs.

Do I always have to start on the 250 grit side?

No, the #250 side of RICEKNIFE’s plated diamond stone is for shaping the edge or bringing back a very blunt knife. A dull knife that is not damaged can start on RICEKNIFE’s #1000 resin-bonded diamond stone.

Do the stones in the Chef set need soaking?

No, none of the three diamond stones in RICEKNIFE’s Chef set needs soaking. RICEKNIFE’s #1000 and #3000 resin-bonded diamond stones are splash-and-go, so you only dampen them with water before sharpening.

Can a beginner start with the Chef sharpening set?

Yes, RICEKNIFE’s Chef set contains every part of the Beginner set, so you can start on Jacob Bech’s beginner route with #250, #1150 and the strop. Jacob Bech still recommends the Beginner set for first-time sharpeners.

Can I add 6000 and 12000 grit stones to the Chef set later?

Yes, RICEKNIFE sells the #6000 and #12000 resin-bonded diamond stones one by one. Jacob Bech suggests buying only the stones you are missing if you already own a stone holder and a leather strop.
