Sharpening guide

Where do resin-bonded diamond stones fit in Jacob Bech’s sharpening sequence?

Jacob Bech’s full route starts with the #250 side of RICEKNIFE’s plated diamond stone. RICEKNIFE’s resin-bonded stones then progress from #1000 to #12000 before the leather strop, with #3000 also suitable as the final stone for a working edge.

Jacob Bech’s full sequence

Dampen the resin-bonded diamond sharpening stone with water and secure it, for example in RICEKNIFE’s stone holder. Follow the knife’s existing edge angle and keep the same angle through every stroke.

  1. #250 plated diamond. Shape the edge on the #250 side of RICEKNIFE’s plated diamond stone with light to moderate pressure, until a small burr forms along the entire edge.
  2. #1000 resin-bonded. Sharpen the edge evenly on RICEKNIFE’s #1000 resin-bonded diamond stone with light to moderate pressure.
  3. #3000 resin-bonded. Refine the edge on RICEKNIFE’s #3000 resin-bonded diamond stone with light pressure, then very light strokes.
  4. #6000 resin-bonded. Refine the already sharp edge on RICEKNIFE’s #6000 resin-bonded diamond stone with light pressure.
  5. #12000 resin-bonded. Give the already sharp edge its final refinement on RICEKNIFE’s #12000 resin-bonded diamond stone with very light pressure.
  6. Leather strop. Finish on the leather strop with RICEKNIFE’s 1.5 micron diamond stropping compound, using edge-trailing strokes only.

Sharpening sets

Should I buy a single resin-bonded stone or a sharpening set?

RICEKNIFE’s Chef sharpening set includes the #1000 and #3000 resin-bonded diamond stones, and the Professional set includes all four grits. If you already own a stone holder and a leather strop, Jacob Bech suggests buying only the stones you are missing.

Questions
Does a resin-bonded diamond stone need soaking?

No, RICEKNIFE’s resin-bonded diamond sharpening stones are splash-and-go. You only dampen the surface of the stone with water and start sharpening right away. RICEKNIFE’s plated diamond stone 250/1150 needs no soaking either.

What comes in the box with a resin-bonded diamond stone?

Each RICEKNIFE resin-bonded diamond stone comes in the box with a sharpening guide. The stone holder, leather strop and stropping compound are not included with the single stone and come in RICEKNIFE’s sharpening sets.

Which steels can a diamond sharpening stone sharpen?

RICEKNIFE’s resin-bonded diamond stones sharpen carbon steel, stainless steel and powder steels such as HAP40 and ZDP189. Diamond is harder than steel, so a diamond stone can sharpen any knife steel.

Can a 3000 grit stone be the final stone?

Yes, RICEKNIFE’s #3000 resin-bonded diamond stone can be the final stage before the leather strop for a sharp working edge. Jacob Bech finishes most of his own knives at #3000.

What is a 12000 grit sharpening stone used for?

RICEKNIFE’s #12000 resin-bonded diamond stone gives an already sharp edge its final refinement before the leather strop. Jacob Bech recommends #6000 and #12000 for experienced sharpeners, knife enthusiasts and chefs.

What is the difference between plated and resin-bonded diamond stones?

RICEKNIFE’s plated diamond stone has a diamond coating on a metal base and covers #250 and #1150. RICEKNIFE’s resin-bonded diamond stones have diamond grains held in resin and are available in 1000, 3000, 6000 and 12000 grit.
