Anatomy

What makes an end-grain oak cutting board different?

The grain direction makes the difference. On RICEKNIFE's end-grain oak board the fibers stand upright, so the knife edge goes between them.

An end-grain board is a cutting board built so the wood fibers stand vertically and the knife edge cuts down between them.

The top face of RICEKNIFE's board is end grain. Every oak fiber in that face stands upright.

Grain

Is an end-grain board gentler on knives than side-grain or plastic?

Yes, according to Jacob Bech. On RICEKNIFE's end-grain oak board the cut goes between the fibers, which is less harsh on the edge.

The edge
"End-grain means the wood fibers stand vertically. When cutting, the fibers separate slightly and close again. This is gentler on the knife edge and helps reduce deep cut marks over time."Jacob Bech · Board Care card

Jacob Bech makes RICEKNIFE Japanese-style knives and diamond sharpening stones. RICEKNIFE's end-grain oak board is where those edges land.

Questions

What should I know before buying an end-grain cutting board?

Know the size, the care and the return terms. RICEKNIFE answers the common questions below.

Is an end-grain cutting board easier on knives?

Jacob Bech says it is. On RICEKNIFE's end-grain oak board the fibers stand vertically, so the cut goes down between them. Jacob Bech finds that less harsh than side-grain or plastic.

What size cutting board should I buy?

Measure your free counter length first. RICEKNIFE's Small is 22.5 cm long, the Medium 45 cm and the Large 65.5 cm. All three RICEKNIFE sizes are 32 cm deep and 4.5 cm thick.

Can an oak cutting board go in the dishwasher?

No. Jacob Bech's rules for RICEKNIFE's end-grain oak board are never the dishwasher and never leave it soaking. Wash the oak by hand with mild soap, dry it, and re-wax when it looks dry.

How often should I wax an end-grain board?

Re-wax RICEKNIFE's end-grain oak board whenever the oak looks dry. After the first use, Jacob Bech's card adds a sand along the grain at 1000–1500 grit for about 30 seconds.

Can the board be sanded if it gets cut marks?

Yes. Jacob Bech's Board Care card says RICEKNIFE's end-grain oak board can be sanded or resurfaced. His After First Use card sands along the grain with 1000–1500 grit for about 30 seconds.

Can I return the board if it does not suit my kitchen?

Yes. RICEKNIFE offers 100-day returns on the end-grain oak cutting board in every size. Unsure between two sizes? Message RICEKNIFE on WhatsApp at +45 20 46 46 90 before you order.
